Loving You Has Made Me Bananas


I've tried a number of banana bread recipes but this one I think, is my favorite.  It's very moist and tasty and it uses no sugar, only honey and applesauce.  Enjoy!

Moist Banana Bread

2 cups whole wheat flour (or whatever you have)
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup applesauce
3/4 cup honey
2 eggs, beaten
3 mashed, over-ripe bananas

Mix the dry ingredients together.  Mix the wet ingredients together.  Pour the wet into the dry and mix.  Fold in mashed bananas.  Pour into a well greased loaf pan and bake at 350 for about 60 minutes or until knife inserted comes out clean.  Cool in pan for 15 minutes or so and then remove loaf onto wire rack to cool.

I also add chopped pecans and a little cinnamon to the mix.  Yummy!!

It looks beyond delicious. One day, some day I hope to try making your version. I miss my "goodies" since unable to get in the kitchen and 'rattle those pans' like I used to, never dreaming it would happen. I LOVE pecans! Never get enough of them. Never.

We always have a loaf or two of banana bread on our counter. I probably eat it for breakfast two or three times a week. I guess I make it so often because it is about the easiest bread one can make. I have made the applesauce version but since I don't often have applesauce around and don't like store bought versions, I usually make the sugar version. But I have the oven time down to a science so it doesn't over bake and dry out. I've also gotten to where I throw in a few chocolate chips into that batter as well.

Hey Sissy! oh yeah, I could eat pecans just by the handful! Sorry you are not able to cook now, that sucks! I didn't know you were having that kind of trouble. I hope you are able to get back in there soon.

Hey Ed! yeah, it's super easy; i usually make it fairly often myself and really enjoy it for breakfast. Chocolate chips would be great!

Taking your recipe and adding in Ed's suggestion of chocolate chips sounds like a great plan. It will have to wait until we get some bananas cause the darned fruit flies were hanging around our ripe ones so we used them already. It!s the time of year where leaving fresh fruit out is nearly impossible.

This is almost exactly the same banana bread recipe I made last weekend!! My recipe called for oil, and I substituted a leftover cup of flavored yogurt instead. So very low fat, my health nut brother even ate it.

Loved your zinnia pix from previous posts Annie, and hope your contemplative mood is heading in an upward arc! --Where did you find the red sunflowers? I have some dark read ones, not nearly as pretty as yours. --Pam in CO

Hey Pam! Ah, i'll have to remember the yogurt idea..
Allen gave me these red sunflowers (have no idea the variety) but you can find them in most any seed catalog too. My mood is getting better and feeling a bit better too.
